Dietary protein is essential to mitigate the loss of muscle that comes with advancing age. Decreases in muscle mass can lead to frailty, loss of strength, slow wound healing and impaired immune function. Eggs, a protein rich food, are inexpensive, while also maintaining a long shelf-life. Purchasing Pearls: 

  • The color of the eggs are determined by the hen’s breed.  Color has relatively no bearing on nutritional content or quality.
  • Size is a personal preference and only matters when used in recipes. Large eggs are standard for most recipes.
  • All eggs contain high-quality protein, about 75 calories, vitamins, minerals, and carotenoids that support eye health.  Eggs, although cholesterol-rich, are not significantly associated with blood cholesterol levels or heart disease for most people. The egg white is pure protein.
  • Carton labels describe how the hens live and what they are fed.  These factors influence the higher prices.  What matters most to you?
